Lemon chicken is one of those meals where cooking is just as easy as it gets, plus you also have a choice to do it in a pan on a stove or in the oven. Additional bonus: served with a cup of tzatziki it’s simply delicious!
500 g chicken meat of your choice
1 organic lemon
a spoonful of olives
5 cloves of garlic
3 tbs olive oil
thyme, basil, rosemary
250 ml water
100 ml white wine
Cut the chicken into pieces (approx inch by inch or smaller). Prepare the marinade by whisking the olive oil and all spices (pepper, thyme, basil, rosemary). Put the meat in an air-tight container, pour the marinade over and leave in the fridge over night.
Heat the skillet with some oil or coconut oil if you prefer and cook the chicken so it’s golden brown on all sides. Add the chopped garlic and cook another minute until fragnant. Add the water, wine, olives and sliced lemon. Cook for another 25 minutes.
