Tzatziki

There are many foods that really need no adjustments to fit into a LCHF meal plan. One of my favourite for the summer is the Greek tzatziki. It’s simple to make, refreshing to eat in hot weather and it is especially delicious when served with grilled meat. Of course, you can have it as a stand alone meal.

Ingredients

2 mid size cucumbers

200 g greek yoghurt

200 g sour cream

salt

pepper

dill

4 cloves of garlic

1 tbs olive oil

Directions

Peel the cucumbers, slice lengthwise and remove seeds. Cut the cucumbers to tiny slices or use the grinder. Add salt and set aside for 20 minutes in a colander, so that the excess water from the veggies drains out.

In a medium bowl, whisk together the yogurt, cream, cucumber, garlic and olive oil. Season with salt, pepper and finely chopped dill. Chill before serving
