Mayo must be my condiment #1. I love it with meat, salad or just a spoon to brighten up my day. Proper mayonaisse takes time and patience to make, this however is fast and simple. The benefit of home-made mayonaisse is choosing the best ingredients: eggs from pasture raised hens and olive oil!
Instead of dripping the oil slowly and exercising the patience muscle, we take an easy approach to mayo. Not saying that the real one should never be made, but if you are in a hurry, here’s an idea.
Take a narrow mixing bowl or just a clean pickle jar, put all the ingredients in and use a hand-blender / stick-blender to thoroughly mix your mayo. Yes, that’s a whole egg.
Ad minced garlic or spoonful of hot chilli to your mayo to make it a bit more edgy!
