Low-Carb Granola

People keep asking me what do I have for breakfast. Well, as anyone who’s been on LCHF long enough, I don’t have »breakfast« in the morning, so my first meal doesn’t even resemble a typical morning meal (except if we’re talking typical British morning meal). But say you want to have granola for a snack? Here it is. LCHFied to the bit!

Ingredients

a few tbs nut mix

a few tbs coconut crisps

1 tbs natural sweetener Sukrin

vanilla extract (powder)

cinnamon

40 g dark chocolate

a tsp of coconut oil

1 tbs chia seeds

Low Carb Granola

Directions

Melt the coconut oil in a medium saucepan. Add the nuts, coconut crisps, cinnamon, vanilla and sprinkle with Sukrin. Keep on stirring the mixture making sure it doesn’t burn. When the Sukrin caramelizes, put the pan aside and cool. When it’s cold, add chopped chocolate and chia seeds. Keep the granola in a jar.
