Zucchini Boats with Prawns

  • 1 big zucchini
  • half onion
  • a few garlic cloves
  • a cup of prawns
  • a few tbs tomatos in a sauce (if possible, choose roma or san marzano type)
  • salt, pepper, basil
  • a chunk of butter
  • a few slices of mozzarella cheese
Stuffed Zucchini


Preheat the oven to 185 deg. C.

Cut zucchini in half lengthwise; scoop out pulp and finely chop it. Do not remove ends.

In a skillet, heat the butter and cook chopped onion until tender. Add the zucchini pulp and cook some more. Then add the rest (prawns, spices, minced garlic and chopped tomatos). Place the zucchini halves on a baking sheed lined with parchment paper and bake 10 minutes. Remove from the oven and spoon the sauce into the zucchini shells. Add mozzarella and return to the oven for another few minutes until the mozzarella melts.
